Toum aka Garlic Paste

A lot have asked for my recipe so I’m bringing this one up to my latest posts. Original one was posted 3 years ago so that’s kind of why it’s hard to find 🙈

Ingredients

  • 1 cup fresh garlic cloves
  • 3 cups vegetable oil (or any neutral oil)
  • 1/3 cup lemon juice
  • 1 tsp salt

Instructions

  • It is very important to alternate the oil and lemon as you add them to the processor. If you don’t, your toum will break. Doing so will result in a nice fluffy and well combined sauce!
  • Blend garlic and salt for 30 sec in a food processor until well chopped. Scrape sides of bowl and run again. As it runs, begin by adding 2 tbs of oil slowly into the processor. Then add a tablespoon of lemon juice. Repeat this about three times. Pause machine to scrape sides. Run it again and begin adding larger amounts of oil and lemon, (1/4 cup oil and 2 tbs lemon juice) alternating between the two liquids until you use it all up. Keep the machine running as you do so and you’ll begin to notice the sauce turning fluffy like a beautiful cloud. Total time of processing about 10min giv e or take a few.
  • Serve with your sandwiches, dip into it with some pita bread or if you dare, eat it straight from the spoon 😜 it’s that goooood!
